There's a lot of textures in HK_Signs and unfortunately the texture names themselves are not translations.. which would've been really nice.
(Instead, they are like "ClenBlckWhtSign_A" .. thanks devs, this texture is black and white, and is indeed..a sign.)
There might be silliness in making a China- or Hong Kong-based map if there are a lot of signs in the wrong places .. like a Buddha shrine with a sign that says "Pork and Noodles" above the entrance.
Anyone know Chinese? I could make an image file of the certain signs I'm wondering about.

Hong Kong would use a mixture of Hokkien, Canton and Mandarin, also two other languages I forgot the name.
For signage, it needs research, I expect official signs are Mandarin and local signs are mostly Canton, with also plenty of English language signs mixed in. Also in high tech environments like internet cafes and import shops, like bookshops or other more recent types of shop, there will be Chinese mixed with Japanese also. You can see they did this in DXHR, even mixed in some Korean language as well. But HK is specifically Canton.

The only symbols I recognize is the 2nd texture in HK_Signs (ClenBlueSign_A), the first two letters mean Shanghai... and the orange sign that says "Open 24 hours" in english at the bottom means snacks/dessert (HK_Sign_05). It would be interesting to make like a list of translations for these, actually I wouldn't be surprised if someone already has
